Sweet Potato Casserole Recipe Ingredients:
6 Medium sweet potatoes
1/2 Cup grated coconut
1/2 Cup chopped pecans and pistachios
2 Tablespoons butter
1/2 Tablespoon freshly ground black pepper
1/4 Cup whole milk
1/8 Cup orange juice
1 Tablespoon Lime zest
Sweet Potato Casserole Cooking Method:
Wash and peel sweet potato and boil until tender. Drain, then mash in a bowl combine the other ingredients adding only 1/4 cup of coconut. Grease casserole dish and pour mixture into it. Using a spatula spread a bit of butter over the top and sprinkle the 1/4 cup of coconut, and 1/2 Cup chopped pecans and or pistachios on it.
Place in a pre-heated oven 350°C and bake until firm and top is light brown.
