Sweet Potato Pudding Recipe – Nevis Style
Sweet Potato Pudding Ingredients:
4 cups of sweet potatoes
1 tablespoon lime juice
2 tablespoons dark rum
3/4 cup sugar
2 tablespoons butter
1/2 cup coconut milk
grated rind of lime
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon powdered cinnamon
1 tablespoon raisins
Sweet Potato Pudding Cooking Method:
To mashed potatoes, add sugar gradually and whole eggs, one at at time, mixing well after each addition.
Mix in butter with a fork.
Mix in grated rind of lime juice.
Add rum. and mix well.
Add salt, baking powder and cinnamon, sifted together.
Mix well and add raisins.
Pour this mixture into a greased pan and bake in a moderate oven (350 degrees) about 50 minutes, until done.
