Pitaya aka Dragon Fruit Smoothie
The Pitaya or Dragon Fruit as it is called, is native to Central and South America, and also grown in Asia, It’s flesh can be purple or white with tiny black seeds. The flesh of this exotic fruit can be eaten on it’s own, or blended into smoothies. It is similar in flavor to the kiwi fruit. The outer skin is not edible. High in lycopene, and vitamin C, and very low in calories, this refreshing fruit is perfect for summer.

5 Ounces Dragon Fruit flesh
1 Ripe Banana
1/2 Teaspoon freshly grated Ginger
1/2 cup water
1/2 cup crushed Ice
Sprig of fresh Mint for granish
The recipe is based around one half of the dragon fruit, one banana, a grating of fresh ginger and a sprig of mint.
Measure out the ingredients and blend till smooth. Best served chilled.
Serve in an parfait glass and top with a sprig of fresh mint.
