Mango Sorbet Recipe – Oualie Beach Resort

Sticking with the “Summer Sunday” recipes theme, I managed to pry this recipe away from the Oualie Beach Resort chef. A light and refresing dessert on a hot Summer evening. Very good and good for you too!
3/4 Cups Sugar
3/4 Cups Water
1 Large strip of orange zest
1 Large mango, peeled, stoned and cubed
1/4 Cup freshly squeezed orange juice
Combine the sugar, water and orange zest in a saucepan.
Bring to a boil and stir to dissolve the sugar. Leave the sugar syrup to cool.
Puree the mango with the orange juice in a food processor, and process until pureed.
There should be about 2 Cups of puree. Add the puree to the cooled sugar syrup and mix well.
Strain and chill.
Transfer the chilled mixture to an ice cream machine and process until firm.
