Green Papaya Pie Recipe – Nevis Island
Green Papaya Pie Recipe Ingredients:
Pie Shell Ingredients:
2 Cups flour
1 Teaspoon salt
2/3 Cup shortening
6 Tablespoons cold water
Green Papaya Pie Recipe Filling:
1-2 Green medium sized papayas (about the size of 5 apples)
1/2 Cup brown cane sugar
2 Tablespoons flour
1 Tablespoon freshly squeezed lime juice
1/4 Teaspoon nutmeg, freshly grated
2 2 Teaspoons cinnamon powder
1/4 Cup butter (not margarine!)
Green Papaya Pie Recipe Cooking Method:
Pie Shell:
Sift flour and add salt. Cut shortening into flour and sprinkle. Repeat until all the flour is moistened. Gather up with your fingers into a ball. Roll out onto a lightly floured board. Make pie shell rolling out the pastry only once. Leave enough pastry back to make the lattice for the top of the pie. Line the greased 9″ pie pan with pastry.
Green Papaya Pie Filling:
Peel, core and thinly slice the papaya as you would an apple. Parboil the papaya. Add two tablespoons of sugar to the water before boiling. Cook until you can pierce it easily with a fork. Mix in the remaining ingredients by cutting in the butter.
Pack on top of the papaya. Place the lattice on the top of pie and pinch together. Bake at 350°F. for 45 mins. – one hour until the fruit is soft.
