Sunshine’s Beach Bar Grilled Bread
Grilled Bread on Pinney’s Beach – Nevis, West Indies
Ingredients:
12 slices of French, about 1/4 inch thick
1 Small chopped onion, minced
1/4 cup fresh cilantro, minced
3 Tablespoons extra virgin olive oil
2 Garlic cloves, minced
1 Small Scotch Bonnet Pepper, or Habanero Pepper
1 Teaspoon dried oregano
1/2 Teaspoon cumin seeds
1/4 Teaspoon Kosher or Sea salt
Grilling Method:
Puree all ingredients, in a food processor. Transfer mixture to small saucepan and simmer for 3-5 minutes. Preheat grill to medium heat. Brush one side of bread with vegetable mixture. Grill until golden, brown and delicious…..thanks Alton :).
