Mango Parfait With Passionfruit Sauce
Mango Parfait
Ingredients:
2 Large ripe mangoes
3 Egg yolks
4 Ounces confectioner’s sugar
8 Ounces heavy cream, lightly whipped
1 Teaspoon freshly squeezed lime juice
Cooking Method:
Lightly oil 8 ramekins or custard cups. Process the mango flesh until you have a smooth puree. Whisk egg yolks and the sugar until very light and thick then add the puree, cream and lime juice. Pour into the prepared dishes and freeze for at least 4 hours
Passionfruit Sauce
Ingredients:
4 Passion fruit
Freshly squeezed orange juice
Sugar syrup
Cooking Method:
Mix the passion fruit pulp with orange juice and sugar syrup to desired taste and sauce consistency. To serve, turn out parfait onto serving plate and surround with sauce.
