Grilled Jerk Shrimp At Pemos Restaurant
Grilled Jerk Shrimp is a great dish, but is not always available, so you will just have to hope you hit the right night at Pemos. No worries though, the rest of the food at Pemos is great too!
Ingredients:
15 – 20 large uncooked shrimp, peeled, de-veined, and tails removed
2 Tablespoons olive oil
1 Onion, finely diced
½ cup Scallion, finely diced
2 cloves of garlic, minced
2 Teaspoons freshly minced (#ad) Thyme
1 Teaspoon Kosher or Sea Salt
2 Teaspoons sugar
1 Teaspoon Allspice
½ Teaspoon freshly grated nutmeg
1 Scotch Bonnet or Habanero pepper, finely minced
1 Teaspoon freshly ground black pepper
2 Tablespoons dark Soy sauce
1 Tablespoon freshly squeezed lime juice
2 tablespoon canola oil to lubricate the grill
Cooking Method:
In a large mixing bowl, combine and mix well all ingredients, and mix in shrimp
Cover well and place in the refrigerator to marinate for 30 minutes.
Place jerk shrimp on a lubricated grill (#ad) over medium coals and grill for 3 – 5 minutes, or until shrimp are opaque…DO NOT OVERCOOK…unless you like pencil erasers.
Serve immediately with fresh drawn butter and a lime wedge or two.
