Green Pepper Soup Recipe From Old Manor Estate

While I have had many versions of Red Bell Pepper soup, this was the first time I had seen the soup prepared with Green Bell Peppers. My initial thoughts were that the soup would be bitter, but knowing how good the food is at Old Manor I decided to give it a try. I was not disappointed, the soup was wonderful! This would make a great summer soup served chilled, or a warming winter soup served hot with a nice baguette. I would also consider serving a few toasted croutons as a garnish, or maybe some chopped chives with grated parmesan cheese. This recipe serves 12
Ingredients:
2 Lbs green peppers, cut into small cubes
8 oz chopped onions
1 oz fresh basil
1 oz fresh tarragon
1 oz fresh oregano
12 cups chicken stock
2 cups heavy cream
Cooking Method:
Blend peppers in blender. Bring stock with the onions and herbs to a boil. Add blended peppers to stock. Let cook for another ten (10) minutes. Season with salt and pepper. Let cool for a while then blend. Add cream and serve.
