Spare Ribs With Pineapple BBQ Sauce

This recipe comes from the Harbour View Guest House and Restaurant in St. Kitts.  Alas, I fear that this charming place is now gone.

Ingredients:

1 Lb. spare ribs
½ Cup fresh pineapple juice
1½ Cups of your favorite barbecue sauce
1 Cup crushed pineapple
1 Small onion, chopped
2 Bay leaves
1 Tsp freshly chopped thyme
Sea salt & freshly ground pepper, to taste

Cooking Method:

For the Sauce:

Mix barbecue sauce with the pineapple juice, and crushed pineapple.

For the ribs:

Parboil ribs with onion, bay leaves, thyme, salt & pepper. Drain water, then dip spare ribs, one at a time into the sauce. Put on sheet rack then into a 350° F oven for 5-10 minutes. Take out and glaze with remaining sauce and serve.

Note: I prefer to finish the ribs over indirect coals on the grill, rather than the oven.
