Old Manor Estate has always been known for excellent food, but in my opinion this recipe is hard to beat.

Ingredients:

4 Cups cooked lobster, diced in about 1/2 inch cubes
1/2 Cup red peppers, finely diced
1/2 Cup yellow peppers, finely diced
1/3 Cup green peppers, finely diced
2 Cups whole milk
2 Cups half and half cream
1/2 Cup dry white wine
1/2 Cup grated Parmesan
1/2 Cup day old bread crumbs
1/4 Cup minced parsley
2 Tablespoons Cornstarch
2 Tablespoons Water

Cooking Method:

Saute peppers in butter, add milk and cream, and bring to a boil, add wine and let simmer for another five minutes.  Season with salt and pepper.  Mix cornstarch and water to form a slurry, add slurry slowly while stirring until desired consistency is achieved. Add diced lobster, and allow to just warm through.

Mix Parmesan, breadcrumbs, and parsley until all are well incorporated.  Divide lobster mixture evenly into eight ramekins or oven-proof dishes.  Lightly top lobster mixture with Parmesan mixture to evenly coat.  Place dishes under broiler until golden brown, and bubbly.

Serve IMMEDIATELY.  Serves eight persons as an appetizer.  Be careful not to burn your mouth!
